Taste of Caviar
...What of the taste. Well, it's certainly different. This caviar is only slightly salted and has no other preservatives, so its flavour is a lot less, well, salty, intense that many of us would be accustomed to.
I have to admit at first I found the taste of Mottra sturgeon caviar a bit mealy, not as fresh and zingy tasting as I am, ahem, used to. However, it grew on me, and quite fast in fact. There is something savoury, almost meaty about this caviar. The way it to serve should also be adjusted I think. Such caviar requires something very delicate to go along side, a little pillow for its gentle seabreeze.
